"Meaty" Chili - this meatless chili includes textured vegetable
protein which is a meat substitute. Follow package directions for a bowl
of chili.
Enchiladas
Prepare Chili as directed on
package. Soft fry 4 corn tortillas. Put 1/4 cup grated cheese, 1 T
chopped onion and 1 T chili on each tortilla. Roll tortillas, place on
oven or microwave proof plate. Pour the remainder of the CHILI over
enchiladas. Sprinkle 1/4 cup over all, heat until cheese melts. Serve
with Refried Pinto Beans with chopped lettuce and tomatoes as garnish.
Huevos Rancheros
Prepare Chili as directed on
package. Warm a flour tortilla, place on dinner plate. Cook desired
number of eggs to suit your taste, put eggs on tortilla, sprinkle 1/4
cup grated cheddar cheese over eggs. Pour hot CHILI over all. Enjoy!
Frito Pie
Prepare Chili as directed on
package. Arrange 2 ounces Frito corn chips on a plate, sprinkle 1/4 to
1/2 cup grated cheddar cheese over corn chips. Pour hot CHILI over all.
May be garnished with chopped lettuce and tomatoes or you may use this
as a sauce to make, pour over burritos, let your imagination run free!
Spanish Rice - prepare
as directed, use as a side dish.
Chicken & Rice Casserole
prepare rice as directed,stir
1 can condensed cream of chicken soup, 1/2 cup chicken broth and1 cup
cooked, chopped chicken together, stir well. Add to rice, gently stir to
mix well. Sprinkle desired amount of grated cheddar cheese on top (1/2
to 1 cup). Bake in 350* oven until cheese melts.
Chicken and Rice Soup
Follow directions for
casserole, omitting cheese and increase chicken broth to 2 cups. Heat
over medium flame until liquid begins to simmer. Serve with warm flour
tortillas.
Refried Pinto Beans -
prepare as directed, use as a side dish.
Bean Dip
Add more water (1 T at a
time) to desired consistency . Chalupas (also called Tostadas) an old
Mexico favorite. Fry 4 corn tortillas in oil until crisp. As they cook,
press with a pancake turner to keep them flat. Drain on paper towel.
Spread 1/4 of refried pinto beans on each tortilla, sprinkle with 1/4
cup grated cheddar cheese, add desired amount of chopped jalapeno
peppers (canned or fresh may be used). Bake in 350* oven until cheese
melts. Top with chopped tomatoes, lettuce and onions. Guacamole and
sour cream may also be added. If desired, cooked ground beef may be
added before cheese.
Burritos
Prepare Chili and Refried
Pinto Beans as directed on packages. Warm 2 flour tortillas, divide
REFRIED PINTO BEANS evenly on the two tortillas, top beans with 1/4 cup
grated cheddar cheese and 2 T CHILI.. Roll tortillas to form a "tube".
Pour remainder of CHILI over burritos. Reheat burrito if necessary.
